Can I run both the PS1 Screen and the actual portable on a single 7.2v battery?

Yes. You just have to wire the power spot on the PSOne board to the spot on your NES board where your regulator used to be (does the NES use a 7805? If so, then it's okay. I don't know about other regulators, but I'd assume it's the same). After that, wire the DC power for NES board and DC power for PSOne screen to a switch/connector to the battery pack. Hope this helped.

Then ya, you can run 7.2 on both, easily.

Yobo is my personal favorite, so good luck. Mainly because the pinouts are written there rather than me having to do the dirty work (Which I actually did before I figured out they were written. >_<)
