Steven King's The Stand. I've read the first book, and a few bits and pieces of the other two.
Bram Stoker's Dracula, is a unique book in how it's written. It's like reading people's journals about events as events roll out.
I agree, the Godfather is a great book.
Even though it's not a book, H. P. Lovecraft is a fantastic writer. The Call of Cthulhu and the Outsider are both mind bending stories.

I Love You Beth Cooper by Larry Doyle (wrote for the Simpsons for a bunch of years, so the book is obviously, really funny.)
