3 hour battery? Thats ok, if its just for notes it shouldn't be constantly on.
Do you need wifi? What features do you need? How long between charges do you want? Palm or Pocket PC (Palm for ease of use, Pocket PC for multitasking)? What kind of business stuff?
I've looked into PDAs a lot over the last few years (hence I own 3), so I kind of have an idea of whats best.

I'm away from a charger for more than 3 hours. Usually around 4 or 5.

I would only like wifi if I can transfer files. If not, then no.

I don't really need many features. I would like to view and edit text documents, take notes, look at files I've transfered, listen to podcasts, look at pictures, and play games. Is this possible or realistic?

What do you think: palm or pocket pc?

My business stuff includes notes, viewing pictures for selections, looking at documents for editing/selection, playing games in my off time, and transferring documents.

Pocket PCs have come a long way, the memory model is a bit different. When you close a program, it just minimizes it - so next time when you run it, it comes up instantaneously. This doesn't affect the speed at all.

When the RAM gets full, the least used application is closed down to make room for the newest-run one.

I have a Sprint PPC-6600 (Now firmware flashed as a Verizon XV6600) that has a 400mhz Intel cpu and 128MB ram. It has bluetooth, SD card slot, and a pretty decent Internet Explorer.
It also has Windows Media Player built in, I converted The Matrix from a DVD and watched it during a flight. Battery life is about 4 hours constant use (pretty good). Not to mention there are tons of emulators for PPCs.

This model is quite popular and somewhat older, so you can probably get one off ebay for $150-200.

Pocket PC. I have a Dell Axim X30 Mid (SD slot, roughly 300 mhz ARM processor, Bluetooth, 802.11b wifi, WM2003), and it works great. You might be able to find one on eBay for a couple hundred dollars. Install TCPMP for media (pocket Windows Media Player sucks), Opera Mobile for browsing (Pocket IE isn't the greatest), and pick up a 2 gig SD card. (Move Opera's cache to it so you don't fill up onboard storage.) Unfortunately PDAs aren't that great for gaming (controls weren't designed for it), so you might want a keyboard for games and text entry.

Are you using it the full 4 to 5 hours you're away from the charger? Sounds like it'll be in your pocket at least part of that time, so pretty much any newer one should be good enough. Dell Axim x30's look pretty good, theres a low end one that doesn't have wireless, and a high and mid range one that do (high end one is faster). I'm not sure about the wireless transfer, but I'm pretty sure you can.
If you want games, get a PSP. You might even be able to do most of the stuff you wanted to, using homebrew of course, because Sony decided that they don't like making extra features and that they want to lose. Or just get a DS homebrew cart like your original idea.
