I got this random idea. What you need is a 5G iPod, a PSOne Screen, and some form of dock.
Basically, you take +5V and GND from the PSOne screen and send the AV signal from the iPod to the screen. The pinout is here

@HomicidalBarber: I thought the same thing (proprietary cable…), but facts point towards a different reason: the jack is usually used for headphones, so the two audio signals have to be at the top two conductors. See, digital camcorders use the top two for left audio (which carries the monaural signal if there is no right audio) and video, so you can use a mono cable (y'know, standard stereo miniplug to two RCA) in place of a three-conductor one. Problem is, if you use this on an iPod, you usually want two channels of music, not video and audio. Yes, it's inflexible, but it's more practical.

If the cables weren't like this, you couldn't use the monaural ones that came with digital still cameras with camcorders, nor could you get stereo audio out of an iPod.

Sort of. It does use your hard drive as a source for video, but it puts it on a large screen too. No, it doesn't use the built-in video player, but it does give you a larger screen to watch stuff on.
You COULD build a version that simply gives you a larger screen, but the video an iPod can support is limited to a small size, so you wouldn't benefit from a much larger screen. With NYKO's movie player, you could actually use 640x480 video.
