Includes but not limited to: SNES, Genesis, Sega CD, PlayStation 1, Nintendo 64, Dreamcast, Game Gear and I guess the Virtual Boy.

As long as the screen takes composite or RGB, yes.

Where can i find such screens?
All i could find were 2" pocket TV's and ps1, ps2/xbox/gamecube screen ( which were too big )
I couldnt find anything between 2 and 5.
