Is it ok to use three of these to power the 3.3V on my n64?

Or do I have to use some sort of adapter, regulator, or resistor?

It depends on the model of N64, some are less sensitive than others, but it probably doesn't make sense to use them. Check out the Free DC-DC converters Thread, and order one of those, and some bigger batteries.
