XBOX 360 AV Cable Fix..?

Does anyone know a work around to get the component and composite to work at the same time with the xbox 360 adapter or another adapter?

impossible. The cable "shorts" a connection so the 360 knows what mode is selected. No two modes can be selected at the same time.
