How do adjustable regulators work?

I think they are LM317 regulators or something like that, I may be wrong, but they are the only kind of adjustables at radio shack. How do you adjust them properly?

theres no simple "adjustment knob" or anything like that. i belive you adjust them by giving a reference voltage to the middle pin with a resistor or two... its in the nintendo 64 sticky.
