I have a gemini Ps2-Xbox/Gamecube control converter, and I was thinking if it was possible to add a expansion bay onto the adapter so I can plug a headset or memory card into it when I use it on my Xbox

no, no you can not, you'd have to re-engineer the memory card completely(even then i dont know) same with the headset.
