Great job! Did you use bondo to fill in the extra space, vacuum form, or what? It looks great whatever you did.
For holding the back plate on, why don't you just glue some screwposts on the case walls and drill holes in the back plate and just screw it together.
I would do an N64P, it's so much more fun portable than PSone (cause of Goldeneye of course!) although it is harder in some aspects. Read up and you'll be fine.
