(1) Official playstation screen (have)
(1) N64 (need, fried the last one)
(1) Expantion pack (need)

(2) battery pack, are these alright? Link
What else do I need guys? I want to have this done by the start of school.

Adding Concept drawing when I get it "on paper" What should I use to make it on the computer?

Those batterys should work. I'm not familiar with the voltage to run the N64 but 3000 mAh will give you a good playtime. Onlything I can think of you might need is wire (but I asume you have that). Maby a extra controler incase you frag it.

You are also gonna need to get a charger and a conecter repair kit.

I used those batteries(well the 3300mAh version) and it works great on my SNESp. I'm not sure on how long it lasts though, but i think it was around 5 and a half hours in my SNESp.
SNESp - 100%
Protable X - 15% - I need money :(

paint is easy and would work but if you want a better 2D drawing thing, use gimp. if you want it 3D, use blender

expansion packs may be hard to find, as far as i know they only come bundled with games like DK64...

what are you using for the case?
