I'm going to be searching MGC for an RGB-capable N64. I know I have seen RGB to component adapters before, but I can't seem to find a link to how to make one. I tried Googling it, which led me to an Atariage post referencing this adapter:

But $81? That's a bit steep. I know it's gotta be possible to make my own.
Also, how much better is RGB than S-video? I would imagine it's better and probably worth the effort of making an adapter, but I could be wrong.

this is a modding forum, go to this link, drill 3 holes in the case and put some rgb cable ports in there

Depends on the screen size. On most small screens you won't notice much if any of a difference between s-video and rgb.

I'll answer my own question in case someone else stumbles across this and is looking for an answer. After a bunch of research I found a cheaper (and still premade) option (talked to Marshall at MGC about building one and basically it's not worth the effort). Not component, but VGA which both monitors I plan on using this with accept:

Other than that, not really, just requires finding the R, G, B, and ground pins on your N64 (and I'm not sure about the sync, I may need to strip sync off of composite). I do plan on doing this, so I will report back with results.
Edit: And for now I'm using the RF modulator that this N64 came with. It's comically bad:
