So I got my hands on a Logic 3 PsOne Screen which only takes RGB. So I have modded my n64 with the RGB-mod and I'm all set for wiring it up!
But... I just don't know how to do it, so I wonder if anybody knows where to solder what from the n64 to the Logic 3 screen cuz I'm really confused right now and don't want to fry anything or such.

I see the problem - The wires are wrong on the N64. it should be wired on the opposite side of the A/V pins. Like, "V" means video, "L" means left audio, and "R" means right audio. It looks like you are wired to ground maybe on the N64.
