Do it the old fashioned way, like a lot of people do, by Soldering 48 individual wires over and over again until you're 100% satisfied with the job

Fry's electronics should have some or just use a 50 pin- 2 row pin/socket header combo which would work fine.

I may post a pic someday soon if I can.

You can just chop it down. Just make sure the spacing is right (.1" and .08" are common). But keep in mind you will probably lose a few pins when you cut.

I have been searching and found this:
http://www.pchcables.com/pinhe2502pir.htm
I think this should work, wouldn't it? cause i dont want to fully wire the system and i dont want to take a chance on cutting the 80 pin header.

Ditto.

RCP wiring isn't even that incredibly hard, just time consuming. Compared to that, standard relocating is a simple 20-minute job.

To get prepared for the N64, try digging up old electronics that stopped working, and see if you can fix them, even though you have no idea why they don't work. When messing around with the N64, you'll be doing a lot of that *grabs a hand full of TI regulators and throws them at the wall*
