I am wondering if this would be able to take the power of a 12v, 6A DC adapter or would that be too many amps?

It doesn't matter how many amps the power supply can put out. It matters how many amps the device you are hooking up at 7.5v will pull. That switching regulator handles 1.5A. If the screen or whatever you hook up to it does not require over around 1.4A it will be fine.

think about it this way; Amps are drawn. The component only takes as much as is needed, when there's not enough, you get problems. It's basically just an "amount". Voltage is more like an attribute and if it's wrong, that can cause problems.
