Let's keep this thread from only being 3 posts.

What are chroma and luma? And how are they different from composite signal?

I'm using a cable that converts svideo to composite, so how does that work?

Chroma (C) is the color component of the video signal; luma (Y) is the brightness. S-Video keeps these signals separate, while composite has both signals together. Your cable that converts S-Video to composite most likely just combines the signals together.

I'm not sure on the specifics for the conversion, but a small circuit may be involved. But why exactly would you want to make that conversion anyways? The N64 already outputs composite as it is.
Check out my FS/T thread!

Woo, I was about to ask this same question. I found the datasheet for my video encoder on my 3.5" DX LCD, and it supports s-video on the IC, so I needed this.

Yeah, the same 'converter' is already part of the n64, You are making this more complicated than it is. Just use the composite output on the A/V connector.
