I desoldered the transformer on the PSone screen (the coiled item on the top of the screen) and extended the connections with decent thickness wires, about 1cm long. Turned the PSone screen on, nothing happened. Soldered the transformer back on, screen worked.

Maybe soldering the wires like that was the equivalent of adding a turn or two to the transformer, resulting in different voltage/current? Just a guess.

At high frequencies, everything changes. The backlight output is close to a hundred kHz, the around 600-700 volts.
Because of the very high voltage, very little current is used - so there's no point to using thick wire. The wire used from the transformer output to the CCFL is actually very small - upwards of 24 gauge but wrapped in thick insulation. Another reason small wires are used is due to the skin effect, which basically means at very high frequencies, AC current only flows on the outer area of the wire. If the wire was any bigger it would be wasted anyway.
Basically, there is no easy way to move the transformer. "low" voltage AC goes in so you will need slightly thicker wire there, while you need to use some CCFL extension wire for the output. The thick insulation is silicon-based, just like spark plug wires in cars, it's to prevent arcing to nearby metals (or, sometimes water in the air!) If you can't find CCFL wiring, use small wiring and seperate them as much as possible. The inverter is designed for a certain impedance on the output - if you have two wires running close to each other, it generates capacitive impedance, which makes your bulb dimmer.
So that was probably more than you wanted to know but now why at least know why
