I have built one for a friend out of a super nintendo controller. Its not hard at all. Just follow that guys directions if you cant figure it out.

You can also wire the USB chip from a $10 controller from Wal-Mart into the NES controller. You'll just have to figure out which pairs of pins on the chip correspond to which buttons. (It's not too complicated.)
