Well, based on what jhammer has said, and my own research, I think I will go with a pair of Audio Technica ATH-A700s. They have good reviews, and look pretty awesome. And, I can get a pair for a bit over $100!
At 64 ohms, they may be a bit hard to drive with an iPod, but a new amp should fix that.

The E3? Skip that, and get the E5. The sound quality is a bit better, but the main kicker is that it has volume controls for lineout; with the E3, it is a fixed level volume (You still have to control it from the device).
