I'll give a quick explanation about increasing voltage/amp hours with multiple batteries.
Series - Wired positive to negative, positive to negative (only one path). Increases voltage, amp hours stay the same.
Parallel - Wired positive to positive, negative to negative (multiple paths). Increases amp hours, voltage stays the same.
Something to remember, if you have the same amount of batteries, its always the same amount of power. A 1.5v, 2Ah battery has 3Wh (watts) of power (v*Ah=Wh). If you put 2 in series, then its 3v, 2Ah, 6Wh. 2 in parallel, 1.5v, 4Ah, still 6Wh.
And amps are drawn, the game boy will only draw as many as it needs (LEDs are an exception to that rule). So having batteries with high Ah ratings won't hurt anything.

I tested my GBA playing Pokemon Gold, and it used about 130mA @~2.7v. Might be a bit more with a GBA game or flash cart.
