Where to start?

I'm new here but I'd like to start a project of my own. I have little experience but I have a solder and can pick up other required tools but what I'm really wondering is what console would be a good idea to start my project on. Which is the easiest and simplest for a beginner?

A Nintendo on a chip (NOAC) would be the easiest. Look for a superjoy III - they are pretty small and a nice choice for a NOAC.
