Would it work to simply send video through wireless headphones instead of audio with the receiver (headphones) hooked to a screen? Or is that out of the question?

Not exactly. The problem is that the bandwidth is too narrow. A video signal requires a bandwidth of about 1 MHz whereas the headphones transceiver has a bandwidth of at most 50 kHz.
You might be able to get a narrow bandwidth TV signal through it, since they can fit through a voice line, though you'll get a 32 line, grayscale image at 12.5 FPS.
