I don't know about reprogramming the microcontroller itself; it'd definitely take some fine soldering to get the program/ICSP/JTAG/whatever pins going to a programmer.
However I do know that writing your own firmware to work as an Xbox controller is possible, since I've done it

I guess what I was really thinking had nothing to do with original xbox firmware, but I thought it would be cool to connect an xbox 360 controller in a computer and have a usb cable go from the xbox 360 to the computer and be able to do stuff like turbo buttons with software on the computer.
but there are probably major flaws with this idea and I cant code at all. so whatever...
