They are amazing. I liked them when I first heard them, which was actually a while before Guitar Hero III. I first heard them in Stepmania. Their songs are UB3R hard.
They're not great live, or so I hear. There are a couple YouTube videos out there that make them sound absolutely horrible. But... Herman Li is still friggin' amazing and severely underrated, I think. Their vocalist leaves a bit to be desired. I like the tone of his voice, it's very epic. It kind of reminds me of Dio but with no "gruff," which even Dio has very little of. However, live, he can NEVER hit the higher notes of their songs. I also have to give props to their drummer, who I personally think is half octopus, and has a quadruple-bass pedal.
Edit: Yes. The lyrics are very... well, they're also quite epic.

I definitely don't like them as much as I used to, but I do enjoy their stuff. I've been listening to them since they were DragonHeart, which was forever ago!
While they're not the best power metal band out there, I have them to thank for introducing me to the scene and getting me into some of my favorite artists like Sonata Arctica, Rhapsody of Fire, and Axenstar.

Yeah I listened to Dragonforce way before GH3 came out, the first song I heard of theirs was Blackfire, I heard Dragonforce is crappy live cause their piss ass drunk when they are playin' live, but I have a buddy that saw them live the last time they came through town, and he said they were not as bad as those Youtube videos make you think.

But I thank Dragonforce for introducing me to the following bands.
Stratovarius (Their early stuff has a horrible lead vocalist)
Hammerfall
Helloween
