PSone screen?
So far I know that the PSone only has the AV in (http://www.retroleum.co.uk/gfx/z80/psoneLCD_front.jpg), but I don't know how to hook that up... How do i convert that to a RCA/the 1 wire that the NES uses?
I found a 3rd party NES screen that already has a RCA connection, which will make it easy
should I use a 3rd party screen or a official PSone screen? I still need info on the PSone screen before I can decide..

That "one wire" is RF, not composite video. It won't work on the PSone screen unless you send it through a tuner, for example a VCR.
The NES already has usable audio and video ports on the side; just use them instead.

You can grab a 1/8" to RCA stereo adapter from Radio Shack since all you want is mono sound. The composite input for the PSOne screen is actually a headphone looking jack on the rear of the bottom section. That A/V port in the photo you posted is for RGB video.
I don't know if Borders will still have Ben's book, but they should be able to order it for you, if you can't/won't buy online.

I went to both Borders and Barnes and Nobel, no luck. 
headphone looking back on the rear bottom? so what adapter would I need for that?
