Correct me if I'm wrong, but from what I understand, this is how they function (and are different):
N64 Joystick: Uses LEDs/Pinwheels along with a photo transistor to make a stream of binary data per clock cycle, therefor counting the acceleration in a given direction (IIRC it tells which specific direction by varying sizes of holes in the pinwheel). It could also be much simpler than this and use a photo resistor, which if such makes it perhaps possible to interface with the gamecube joystick given enough probing/some hacking.
Edit: Another source labels it as a photocell measuring the current produced, which is possible as well.
Gamecube Joystick: Potentiometer based measuring the resistance across the x/y axises. Measure with a multimeter for full resistance range.

ditto, what gannon said is dead on, unless you want to convert those then it is not worth your time,
It is kinda like (insert bad analogy here) It is just very difficult, Unless you want to waste a lot of time effort and MONEY, then do not wory about it, read the sticky, get a third party, (sharkpad64 highly recommended) and live the rest of your live without that greif
