Most of the stuff Bic mentioned already exists in homebrew format.
There's even a Microsoft game for GBC that boots with the old Windows 98 logo and everything. It plays all the great old windows games (minesweeper, skifree, etc.).

Well if i cold have unlimited funds and such i would port DOS to it. complete with floppy drive (http://www.hackaday.com/2005/04/25/game ... isk-drive/)
(there must be someway to connect it to a GB0 right?)

and i'd port BattleZone! imangine it in all its green and vector glory.
