Does anyone know HOW one would go about adjusting an "Adjustable Voltage Regulator"? I've searched around, but alas, Nothing. Any help would be greatly appreciated.

well knowing which regulator you plan on using will help us figure out how to help you. Basically all adjustable regulators require a resistor feedback network to determine what the output voltage should be. The feedback is usually in the form of a voltage divider, meaing two resistors are used to set a reference voltage. If you replace one of those resistors with a variable one, you can vary your output.
