Well, you have to supply the portable with however much voltage it takes in from the DC adapter. You can usually find this amount on the adapter itself. Then, it's just a matter of getting batteries that output that voltage, or getting a regulator that changes the battery's voltage to the voltage found on the DC adapter.
The 7805 concerns the PSOne screen, not the console itself. The PSOne screen can take a range of voltages, from 7.5V-9V I believe is correct. However, if your batteries don't give off that much voltage, you have the option to bypass the part of the PSOne screen's circuitry that powers the backlight by soldering a wire hooked up to a 5V power supply (or batteries) into the input leg of the 7805. This will be enough voltage to power the screen, but not the backlight. In order to use a backlight after bypassing the 7805, you'd have to do the LED mod, which can be found in the stickes of the portable screen forum. Please note unless your batteries give off less than 5V, you will not have to bypass the 7805. And the only reason you would have batteries that supply less than 5V is iff you were using a NOAC, which, by your writing, I can assume you aren't.
So, it is possible to just cut the DC adapter and hook up a battery that supplies the equivalent voltage. Obviously, if the console plugs into the wall without a "wall wart" at its end, the console has the adapter INSIDE itself, and the plug you're using is only an extension cord. As mentioned above, if you're not using the original Playstation or a Genesis, you should be fine.
So: Therefore, you can hook up a battery of equivalent voltage to the two wires inside a DC adapter. And no you shouldn't have to worry about the 7805.
