If you have a tortilla press and some corn flour, I can give you a really good recipe if I can find it.

1. Make a chicken salad.

Experiment with different amounts of everything, and top it off with any light dressing you have. I recommened raspberry vinegrate if you have it.

Also, throw in chedder or jack cheese lightly in the salad, it tastes awesome.

This works great with fruit also.

2. Make a decorated salad steak platter.

Take a large platter and place vegtables with stratagy all over the plate neatly.

Cut the steak up unbelievably small/thin.

It looks tight, and tastes scrumptous.

If you have any tortia (sp?) wraps or pita bread, make Chicken Ceaser pockets/wraps!

-chicken
-lettuce
-tomato (optional)
-bacon or imitation bacon bits
-pita bread/ wrap bread
-ceasar salad dressing

1. Prepare the chicken if it needs to be. You can probably pan fry it, but I find it easier to boil it.

2. If you're using imitation bacon bits, ignore this step. Fry up some bacon. It's best to make it crispy but not burnt. Cut off the fat.

3. Break up the lettuce into portions that look right.

4. Do #3 but with the chicken

5. chop up the bacon into a very coarse pile. A food processor really speeds this up a lot. No need to process bacon bits.

6. Assemble the sandwiches using the prepared ingredients. Don't add dressing to it. try to make the ingredients mixed together wel (not a seperate pile of chicken in the middle)l, it helps the flavor a lot.

7. Serve cold with dressing in a small dish or in the bottle.

Good salad dressing mix:

50% Italian, 50% Ceasar. Works well with Stop & Shop and Newman's Own brands.

Or do BLTs.

Or chicken salad sandwiches.

If you have any leftover KFC around, throw the meat and skin in the food processor (remove ALL bone!). Then move it to another bowl and add mayonaise to taste. This makes some kickbutt chicken salad! Mmmm 11 herbs and spices...

wow that sounds good aswell!

i found this:\\CHICKEN BREAST WITH MUSHROOMS

1 whole chicken breast
Salt and pepper
Vegetable cooking spray
1 tbsp. low-cal butter
1/4 c. red onion, chopped
1 c. mushrooms, sliced
1/2 tsp. rosemary
1/4 tsp. thyme
Paprika
1/4 c. sparkling white grape juice
1 tsp. parsley, minced

Separate chicken breasts in halves. Sprinkle lightly with salt and pepper. Spray a nonstick skillet with cooking spray. Add butter and heat. Add onions and cook until tender. Add chicken and saute two minutes on each side, until browned. Add mushrooms, rosemary, and thyme; toss for a minute or two. Sprinkle with paprika. Add grape juice, lower heat, cover pan and cook for additional 20 to 25 minutes, until chicken is tender. Makes two servings.

it seems pretty good but i would cook it in beef stock and make a mushroom and onion diane sauce...
