I just found a website of some guy making an NES flash cart.

It looks pretty cool even though it only supports a few mappers I'd love to get one.

I doubt they're easily found nowadays, even in China (a friend told me that pirate carts in general have been dwindling in China).
Flash carts will only run one executable at a time. Unless you have a tool that will generate a menu for the games and run them, the cart can only hold one game. Those wacky pirates came up with some tools for the Gameboy and GBA to support storage of multiple games -- it's not something that one can just build into a cart (without physical switches being on the cart...)

I was contemplating doing this a while back, you only need some Atmel 256K flash ram and a EEPROM/flash programmer off ebay. Of course, you need more than that but that's the basic part.
I also researched building a N64 flash cart (like the doctor v64jr) but you'd need at least an FPGA for glue logic. I was thinking of using an old 32MB stick of EDO DRAM (one of those SIMM modules) but they are tricky to wire.
