Ok so my N64 is wired like this

Ok is this wiring gonna give the N64 3.3 or 6.6v. The TI and the N64 source are inputting 3.3v but the TI is running off the N64 one.

Yes that will work fine. You'll need a smart/peak charger to charge the battery to its full capacity. The one listed in the battery page would seem to work.

So if I could get 25000mah of batteries how long would it power an N64 and unmodded screen? How do you calculate that anyway?

I think thats about 2 hours.. people have given me different amounts of how much mA the n64 takes so its just a guess..

With 25000mAh, an unmodded screen and an N64 would last about 12 and a half hours, but that would be a ridiculous amount of batteries (not to mention really heavy). If you meant 2500mAh, then it would last closer to an hour and a quarter.

To get those numbers: total time = (battery mAh)/(load mA). In this case, I assumed the total draw of an unmodded PSone screen and an N64 (without taking into consideration the use of a switching regulator or DC-DC converter) was about 2 amps. So 2 amps = 2000 mA, then total time = 25000mAh/2000mA = 12.5 hours.

Edit: 10 2500mAh batteries in series would give you 2500mAh at 10 times the voltage of an individual battery. 10 2500mAh batteries in parallel would give you 25000mAh, but it would also be a disaster waiting to happen.

If you were going for that amount of batteries, for the weight and all, you would have been better with a lead acid battery or someting.
