all lcds use RGB.
Its just really really hard to find the lines for it. Sometimes they are not even there.

I know the PSOne screen accepts RGB. Which others? Is the Hip Gear screen composite that is converted to RGB?

You probably roasted some of the other components on the board, not the 7805. You need to go into the board with 7.5V. Not 12V, not 5V. Use an LM317AT and build the circuit to get it to 7.5V. With proper heatsinking it will work, taking 12V down to 7.5V. It does get HOT as you're releasing 4.5W or ...
