This point is freaking impossible to solder to! It's the one sligtly above the main bottom components on the back board? Any tips on soldering to this ground, and uh...will soldering to the ground on the 7805 to the right of the board, serve as an appropiate ground for power and video/audio?

No there's a silver rectangle that's ground that's to the left of the screen and not the screw holes. If you were to look at the two screwholes to the left, its about halfway between the two.

strip the second wire on the first port and connect ground to it. Like this:
Now you can also cut the first wire and strip it and connect the Possitive to that......and then just twist. Then wrap electric tape around em and you're good to go

The other grounds on the connector are meant for the video and audio signals, and should not be used for the main power ground. They may all be connected to the same spot, but you still want to keep things like that seperated to avoid noise. It may not make a difference in this case, but it's still a good practice.
