i will have to get skies of arcadia for DC because i played skies of arcadia legends for GC and i liked it pretty good

Phantasy Star Online, perhaps? Cool, but lacking much of what one would consider a plot. It can be great fun with multiple people, though (either online or with the split-screen mode)

Well, the version released for the GC had split-screen mode, so I decided to make a blatant assumption about the DC version :P If you want a traditional RPG- one which you play by yourself- then you may want to avoid Phantasy Star Online.

yeah i had legend of dragoon and beat it 3 times and gave it to my cousin because his is too scratched up

omg, how did I let this topic slip by?
Grandia II on DC, without question. It's about the most interesting storyline I've ever played. The graphics are incredible, and the battle system is the perfect mix of action and turn-based.

which also reminds me that I've loaned it to somebody.

Damnit that makes me want to make my Dreamcast a handheld portable more then ever. I have both PSO and Grandia II, both of which I've had fun with.
As for other RPGs I know Blue Strike (or something similar) is one.

One of my favorites for the DC was the "Record of Lodoss War" a great Diablo-ish type RPG.
