It depends on the capacitor, some have it, some do not. What does it say on the 360 capacitor?
If nothing, you may need a capacitance tester to find out.

I can't help but think you should have worked on a simpler project first. You don't want to be figuring out how to desolder on something as complex as a 360 board.
As far as the solder on the holes - if it is just extra solder that was already in there and you couldn't get it out, that's ok. You can leave it there. It may even be a plus to have solder already in place for resoldering a component.
For the caps - You really should just solder some wire to the ends and extend them. If there are some that are damaged take the values that you posted and find some new ones on digikey.com or ebay or go to that electronics store you mentioned. A single cap isn't usually more than a dollar.
Also, be careful. I'd hate to see you waste your money because you messed up the board.

I know, I didn't do the best job of desoldering the caps so some of them got broken, would 30awg wire work to extend them? I'll still need to buy about 5-8 though, but I cannot find any with the same specs.
I can't find my usb cable for the Digicam, so now pics for now, sorry. I'll try and find pics of them on the net from a xbox 360 board.

Those should work perfectly, unless they are timing capacitors. I highly, highly doubt that, though; They would have used SMT for timing.
So, buy those and you should be all set!

Here is a pic of them, can't see much but they are the ones all around the heatsinks. If a better pic is needed, I will try and find one.

Palmertech, so those would replace these? The size of them looks slightly different though. These are the tallest capacitors on the motherboard.
BTW: not my image, but I don't think anyone would get mad for using it as a reference.
