Now that you have posted the larger pictures, people (who know more about this kind of thing than we do) will be able to pick them out.
How did the DVD player know whether to use video in or video out? If it was a switch or button, follow the wires. If I had to venture a guess, though, I think they'd be right next to the video ports.
there was a switch for power and AV(in/out) and volume and all that, but i cant trace them back tot the screen cause its mad small and also it came off a separate board

mmm'kay I have a screen/portable dvd player that looks a lot like that, but to use the screen I'm %90 sure You'll have to keep the main board (I.E the main board connects the signal to digital and then sends it to the screens smaller baord you have pictured)
the pinout for video/audio have already been shown by your photos, those ports that are on the main board (video, audio, headphone etc.) will probs be the most accessible pinout. if you flip the board over there should be the solder points for each of them.

okay, i see what you're saying. so there probably isn't any way to bypass the main mobo? there's a smaller board that the speakers and screen connect to (i can snap a pic in a few), could that board be the only board the screen and speakers need?
