I've PP'd my plans so far to revise what I'm going to be doing with my handheld Wii.
Since there's no keyboard that can be attached, there really is no reason to make it a laptop... just slap a screen on the top and the battery on the back, and you can essentially create a Wii caddy which has a battery and screen, and plug your own Wii into that. When you get home, you can remove your Wii from the caddy. Not only that, but it's perfect for mass production, and doesn't void warranty.
The biggest issue is creating duplicate connectors for the video and power which is where I've stopped. Measurements have to be perfect in order for the Wii to slide in and out easily, and this could take a lot of revisions.

Wii laptop doesn't need a keyboard, just that its size and control scheme warrants a laptop design. Personally, I'm getting a second Wii unit just for portablizing into my ultra-original-name-idea the PiiWii

Battery-wise, I'm looking into a good attack plan, since I'm not sure of the whole power situation in the Wii itself, it has an external power supply, so it's probably a mess in there.

If you're going to try with the IR directly firing from the guns, It won't work, as the signal isn't constant no matter what system you use. The newest Lazer Tag series, Lazer Tag Team Ops, has a zone feature that constantly emmits, but it goes in all directions around it, and I'd assume it'd confuse the Wii remote. My IrLED's are from the guts of a crappy 'laser challenge' set, I used the case for a nes lightgun.

here's an idea. there are two possible reasons why doesn't the sensor bar work at close distances. is it because of the intensity of the IR LEDs? or is it the distance between the LEDs. If it's the first, you could just adjust the intensities of the LEDs, and if it's the second one, just put the LEDs closer together on the portable. Then the wii-mote will detect them as being close together and will assume that you are further away from the screen than you actually are.

The Wiimote doesn't work at close distance because the LED's become outside the view of the Wiimote's IR camera. Kind of like how a pilot can't see the runway lights to either side of his plane when he lands.
If a person put a (miniature) wide-angle lense on the Wiimote you could, in theory, get closer.
Also, putting the LED's on either side of the screen, about halfway up, with the sensor bar set to "Above" makes the vertical positioning of the cursor MUCH closer to where the Wiimote points.
The Wii laptop is going to be widescreen. Once you get the system down to the circuit board it's almost unbelievable how little there is to it.
Also, I have run Gamecubes off 8 AA's (or whatever it is that makes 12 volts) but this same setup does NOT run the Wii. The LED comes on but the system will not boot.

PS: I like the PS3 better. (flame bait) Resistance Co-Op is a blast. The only Wii game I care for is Wii Sports Bowling and Tennis (not a Zelda fan, sorry)
PSS: I have some other projects in the works beyond this but they are all, of course, top secret.
