I know that it would be incredibly difficult. I have also attempted to do such a thing a while back, golden eye on 4 tv's. Just ended up using 3 splitters and some cardboard. As you describe it now the LOB64 would do just that, BUT find a way to setup a small video multiplexer/demultiplexer so each screen only gets their portion of the n64 screen (2 player goldneneye: You split the video stream in half, so P1 get the top half and P2 gets the bottom half) then you would ...

Another option for all of the other counsels that require much higher number of pins would he HDMI. It has 20 pins, readably available, and the HDMI port is even smaller than a cat-5 connector. If you know where to look there fairly cheep.

PLUS you could have a HDMI inspired networking logo.

I have seen Computer cooling systems that place the coolant radiator outside of the case, You could place the radiator for the coolant system outside of the room. This would require a larger pump though.
