Does the Jakk's unit output composite?

Yes, it's one of those plug and play TV things with the yellow and white cables.

OK, does it output only composite? (No RF available.) Because if it does, then I don't understand how Nick could get both the channel scanning, and his TV then lock onto the game. If he's using composite signal but did not wire the TV to sense "A/V plug in", the TV should never be able to "find" the signal, unless it has very smart firmware that is able to work around a broken "A/V plug in" sense switch by checking the composite line if it scans through all channels without detecting a signal.

Well, I desoldered the tuner (yes, it was the tuner, got Ben's book) and I'm waiting to get some LED's for the LED mod. Sorry for the bump. Still not sure if the screen will work or not, can't tell without the lamp and I'm too lazy to look for my soldering iron right now. Pics when I make progress.
