I didn't think that a desktop drive would fit w/ mobo inside a NES

If you chop out the trenches in the bottom of the NES, I wouldn't be surprised if a full DVD drive fits. That board is maybe 2 inches tall, and could be put off to one side of the case. I'd try it out before getting a laptop DVD drive, assuming you have a drive you could use for sizing.

I am going to see how it all fits together and then I will decide where to go from there. Thanx for the help guys, I'll post more once I get farther along.

Do you think a tv card would go onto that board? if so would it slill fit inside the nes case?

A full-size PCI card won't fit unless you can find a right-angle PCI riser, but you could definitely use a USB TV tuner connected to one of the motherboard's USB headers. (You'll need an adapter like this one.)

Also be careful to choose a card that works with the software you will use to record; a lot of the 'open' ones like Freevo and MythTV need the card to have hardware MPEG encoders, which very cheap cards won't have. (Of course any card will work with its own software.)
