What I need to know is if the car turning on/off will turn off the N64.

probably will, it interupts the power at the lease, you could mebe put a BIG cap on the line to carry the ovltage but i dunno

it's running from regulators (3.3v and 7805) so that shouldn't be a problem, especially with a cap or inductor or something. depending on how you wire it up it could stay on if you turn the car on/off.
