I actually found a couple of local arcades that sell their empty cabinets pretty close by. One guy said he would work with me on getting a gutted SFII cabinet with a working monitor and buttons. Unfortunately he can't deliver it. Another guy though has gutted cabinets of all kinds including candy ...

Try this place NorthCoast Custom Arcades
They have a decent number of cabinet designs that ship pre-cut and are easy to assemble like most furniture these days.
Their Upright design seems great for a MAME project, and has a slide out keyboard spot with still having a typical control panel on top ...

Yeah, that was pretty much what I was getting at. I really don't know if this is possible but you could try buying a really cheap USB pad and soldering the triggers from the coin chutes to the buttons on the usb controller's board. Kind of low brow-ish but possibly a viable solution?
