I have heard mixed reviews of Honeycomb on tablets that weren't built for it. I would try to see if you can find a version of Cyanogenmod that will work on your device. I have Cyanogen, and it's really nice. I have been meaning to try Honeycomb (there is a hacked rom of it available for my tablet), but I haven't gotten around to it.
BTW I have a
Nook Color with Cyanogenmod7 on it. Typically the only way that you'll find a Honeycomb rom available for your device is if it has an active hacking community behind it. So I'd give the same recommendation as tom61, see if there is a forum dedicated to hacking your particular tablet.
