I'm not sure if i'll ever actually build a portable as a complex as the 360 but in the interest of foresight I like to keep my eyes open for free/cheap goodies that could come in handy. One such thing was this screen which came with my roommates new computer seen here

Any thoughts, i'm sure its "worth keeping" just because why the hell not but are there any deal breakers in using it on for 360 mod

Should be fine. And its free! Plus monitors that size are becoming harder to find.
The only "problem" you might have is that it may be a little small in an 360 laptop. Meaning you might have a little extra bezel or border. Typically, people use 17 inch monitors, but 16 inches would be fine.
