I think I'm over thinking this, and I believe my answer to this question should be yes....but if I have the room should I leave the RF box on?
The only reason I can really think of for removing it is that it will eat-up battery power and I want to maximize battery power. Any thoughts?

Not only would removing it save a little power, but you'll also save some weight because you won't need the somewhat heavy box with all its RF shielding.
The only drawback is the unboosted composite signal off the board is weak, so you will have to build a simple amplifier. It's just one transistor and 3 resistors, all of which you can get at Radio Shack. (You might even be able to get them from the RF box.) It's on page 122 of the book if you have it (or can get it from the library), but here's a basic diagram:

Mario (the member, not the Italian plumber) made up a NESp Instructable, and outlines the whole process from start to finish. It has a better description of the video amp.
